Butternut Squash Soup

A Terra Foods Unique Recipe

1-2 Bunches Kale, or as much as you can fit
1 lb Butternut Squash, cubed*
2 Carrots, diced
2 Celery Stalks, diced
1 Onion, diced
2 Cups Vegetable or Chicken Broth
15oz Maya Kaimal Coconut Curry Simmer Sauce
½ tsp Sea Salt, to taste
½ tsp Black Pepper, to taste

Dice vegetables and add all items to liquid. Bring to a boil; reduce to simmer.

Total cooking time: 1 hour.

*Butternut squash is available cubed or whole. To cube whole squash, first stabilize the squash by cutting off the bottom with a sharp chef’s knife. Next, cut the stem end off the same way. Stand squash on the cut end and hold firmly with one hand, using a sharp vegetable peeler to remove the skin in downward strokes. Again with the squash standing on the flat end (no wobbling), cut in half from top to bottom, working slowly with the chef’s knife. You can use a rubber mallet to ease the sides of the knife down through the center of the squash. Once halved, use a metal spoon to scoop out the seeds. Reserve seeds to toast as a topping, if you like. Place the squash cut-side down on the cutting board, and cut pieces in half until cube-sized.

Optional: top with sour cream, cinnamon, nutmeg, maple syrup, or any other sweet or savory taste you prefer.

Lava Soup

Not spicy – colorful! A Terra Foods Unique Recipe

2 Med or 1 Large Beet

2 Garnet Sweet Potatoes
4 Med Yukon Gold Potatoes
3 Carrots
1 Med Leek
1 Red Onion
1 Full Bulb Garlic
1 or 2 Bunches Kale

32oz Veggie Broth
16oz Water

2 Tbsp Hearty Brown Rice Miso
1 Tbsp Spicy Dijon Mustard
1 Tbsp Apple Cider Vinegar
1 Tbsp Sea Salt
1 Tbsp Pepper

Add broth and water to large soup pot. Chop all veggies to desired size. I recommend small beet chunks as they will soften faster that way. Tear kale leaves from stem, then add. Bring to boil; reduce to simmer.

Add miso, mustard, ACV, salt & pepper to smaller mixing bowl, mix together and add once soup is at simmer. Take a moment to appreciate the colors of beets and carrots in your soup pot!

Total cooking time: 1 ½ hour.

Optional: Top with sour cream, avocado, or croutons.
